Mesa Roja was born in 2018 from a single conviction held by chef and founder Isabella Reyes: that Tex-Mex, at its finest, deserves the same reverence as any great culinary tradition. Raised in San Antonio and trained in Mexico City, Isabella returned to North Texas with a vision — to create a space where the mesquite-smoke soul of Texas and the depth of interior Mexican cuisine could coexist beautifully on one table.
Our philosophy is one of respect — for the land, the ingredient, and the diner. Every dish on our menu traces a clear line from farm to flame: local Hill Country ranchers supply our beef, Fredericksburg orchards contribute to our salsas, and Gulf-fresh seafood makes its way inland twice a week. We honor traditional Mexican techniques — mole negro, nixtamalized masa, slow-braised barbacoa — while letting Texas flavors speak with equal confidence.
